Parts of the pig

For those of you who have yet to try out some food from the islands, let me tell you that you are missing quite a bit. For some reason, when you dive into a meal with stewed chicken, calalloo and red beans, there is nothing to compare to it. Some would rave about the stew oxtail, in fact if it was not for the particular section of the animal that provided the meat for this dish, I might actually be raving about it. Another unique itemis the souse, a dish that is prepared “raw” with parts of the pig and usually served around Christmas time.
